πΊ Lord Nelson Pub β Modern Kitchen for a Historic Gem
π° A Riverside Landmark
The Lord Nelson Pub, built in 1805, is a famous riverside pub, and therefore, it needed careful restoration, so we were asked to design a kitchen that preserves its charm while, at the same time, modernising its facilities. Moreover, Shepherd Neame wanted a kitchen that could serve both locals and visitors efficiently, while also meeting hygiene and safety standards. Consequently, we planned a design that balances history with modern functionality.
π Project Scope
First, we worked closely with the main contractor to plan the kitchen layout, and at the same time, we considered workflow and appliance placement. Then, we coordinated with appliance installers to ensure everything fit perfectly, while also allowing for easy cleaning and maintenance. Furthermore, we designed the space so that staff could move freely, and in addition, it could handle high service volumes during busy periods.
π οΈ Kitchen Formation & Structure
At first, the main contractor completed structural work, and meanwhile, we supervised wall cladding installation to ensure hygiene. Also, we laid slip-resistant flooring to improve safety, while simultaneously making cleaning easier. As a result, the kitchen now meets modern hygiene rules, and in addition, it is practical for daily operations. Therefore, staff can work efficiently without compromising safety, and overall, the space feels modern yet respects the pubβs heritage.
π³ Kitchen Design & Equipment
Next, we designed a custom extraction canopy with external ductwork, which removes smoke and cooking smells efficiently, while also maintaining fresh air. Then, we installed high-quality appliances, such as Blue Seal ranges, ovens, and hobs for heavy-duty cooking, and at the same time, Hoshizaki fridges provide energy-efficient cooling. Moreover, Maidaid dishwashers and glasswashers clean quickly, while a large ice machine in the cellar ensures drinks are always available. Consequently, staff can cook, clean, and serve without delays, and in addition, the workflow is smooth and safe.
π Outcome & Impact
After reopening on 14th February 2020, the pub quickly regained popularity, and as a result, meals could be served faster while maintaining quality. Furthermore, the modern equipment fits perfectly with the historic interior, and at the same time, staff enjoy a safer and more hygienic environment. Therefore, customer satisfaction increased, and in addition, the kitchen now supports high-volume service without stress. Overall, the transformation demonstrates how history and modern efficiency can work together successfully.
