Our client owns three characterful Victorian and Gothic style Best Western hotels in the South East, in Canterbury, Folkestone and Eastbourne.
This family-run business needed to fully refurbish two of their main kitchens and their brief was that they should be carried out at the same time and completed on or about the same day.

After a detailed consultation process involving our clients Christian and Daniel at The Abbotts Barton Hotel, along with other key staff members, design and program of works were agreed for each hotel.
For each hotel, we first had to create a temporary kitchen area and agree staff routes to and from the dining areas as the hotels were in full operation albeit with a simplified evening menu being offered.
We also had to consider construction noise, particularly early mornings and lunchtimes to keep guest disruption to an absolute minimum.

The Abbots Barton had an irregular shaped kitchen in which we removed a couple of dividing walls to open the space up and then entirely reversed the locations of the cookline and prep areas to make for a much-improved service workflow. This repositioning of equipment required the digging of new floor gulleys and drainage.

The staff route from the temporary kitchen to the dining room involved using a route through the kitchen under construction so keeping the hotel and our own staff safe was a priority, It meant that elements of the flooring had to be completed between 10.30pm and 6am.
Other works were less complicated such as the new extraction system and hygienic wall cladding.

Installation of Blue Seal and Rational cooking equipment completed the kitchen and the project which was finished on budget and precisely on time.
