What does a commercial kitchen extraction canopy actually do
A commercial kitchen extraction canopy sits above cooking equipment and captures the heat, steam, grease particles and odours produced during cooking, then removes them from the building through ductwork before they can settle on surfaces or trigger fire risk. Without an effective canopy, kitchens become hot, humid and difficult to work in, and grease builds up on walls, ceilings and equipment far faster than it should.
Canopies are not just a metal box with a fan attached. Each one is designed around the equipment underneath it, the airflow rates needed, and how the kitchen is used day to day. Water wash canopy
Used over heavy grease production such as chargrills and fryers, these canopies wash grease from the filters automatically, reducing manual cleaning and fire risk.
UV canopy
Uses ultraviolet lamps to break down grease and odour compounds before extraction, popular where duct runs are long or where odour control near neighbours is a concern.

Ductwork route and grease access
Ductwork must be built to allow access for cleaning at every change of direction, in line with fire safety guidance. A canopy is only as good as the duct run behind it.
Fire suppression compatibility

Not always, but any canopy over high risk equipment such as chargrills, fryers or char broilers is normally required to have integrated fire suppression by insurers and fire risk assessors. Your site survey will confirm what your specific equipment schedule needs.
How often does a commercial kitchen extraction canopy need cleaning?
This depends on usage, but most busy kitchens need grease filters cleaned weekly and full ductwork cleaning at least every six months, in line with fire safety and insurance requirements. Heavier cooking such as grills and fryers usually needs more frequent attention.
Can an existing canopy be reused if we change our kitchen equipment?
