The Blue Pigeons is a family-run English restaurant and boutique hotel in the village of Worth, known for warm hospitality and locally sourced, seasonal food, where guests come to eat, drink and stay. When new owner Tom took the venue on, he commissioned a full-scale refurbishment and brought in Kent Commercial Kitchens to deliver the kitchen and bar.

The existing kitchen worked, but it was tight on space and the flow held the team back. The brief was a kitchen that made the most of a small footprint, ran efficiently through service and met food-hygiene and ventilation standards throughout. The work formed part of a wider site-wide upgrade, so it had to be delivered on a live refurbishment site alongside other trades, and held to programme while the building's electrical infrastructure was being upgraded around us.

Reconfigured for flow, built for a small space

Workflow could only improve by reconfiguring the layout, so we did. We converted the adjacent storeroom into a dedicated dishwashing and prep zone, taking pressure off the main kitchen at peak and freeing up valuable space on the line. An external walk-in cold room added refrigerated storage without giving up floor area inside, solving the venue's storage constraint at the same time.

Quiet, clean and compliant ventilation

We designed and built a bespoke extraction system engineered for low-noise operation, energy efficiency and easy maintenance access, keeping the kitchen a comfortable place to work and meeting food-hygiene and ventilation requirements. Jemiclad uPVC hygienic wall cladding and Polyflor slip-resistant flooring went in throughout the kitchen and prep areas for a wipe-clean, food-safe, easy-to-maintain finish.

In-house, around a live site

With space at a premium, equipment selection was critical, so we specified a compact, high-output kitchen around a bespoke cooksuite, CookTek induction and Rational combi ovens. The final phase was the bar fit-out. Throughout, we coordinated closely with the other trades on site and stayed adaptable around the electrical infrastructure upgrade, keeping momentum and holding the programme.

A fire suppression system was installed alongside the extraction, and we supplied a full set of kitchen essentials so the team had everything they needed from day one.

Despite the spatial challenges and a live refurbishment environment, the project was completed on schedule and to specification. The Blue Pigeons reopened with a kitchen and bar built to run efficiently in a small space, supporting a venue that blends character and quality in the heart of Kent.
