The brief

A kitchen to match a flagship sports venue

Avenue Tennis in Gillingham is a high-end sports and wellness centre — indoor and outdoor courts, spa facilities, treatment rooms and function spaces. WW Martin Construction appointed Kent Commercial Kitchens to design and install the commercial kitchen as part of the wider new-build programme, with the kitchen needing to be operational ahead of the venue's opening.

The brief was a full commercial kitchen fit-out from blank shell: extraction, services, bespoke fabrication, suspended ceiling and full equipment supply and install. Works had to be coordinated around the active main contractor programme, with the kitchen completed in a 5-week window before commissioning and the venue opening.

What we did

Shell to operational kitchen in 5 weeks

Extraction and ventilation

4.6-metre extraction canopy installed over the cooking line, with high-capacity ductwork and advanced filtration. Acoustic silencers specified to manage noise levels — important in a wellness venue where member comfort in adjacent spaces is a priority. Systems designed to DW172 and sized for the Blue Seal and Rational equipment load.

Bespoke stainless steel fabrication

Prep counters, gantry, sink runs and pass-through supports fabricated in-house at our Folkestone workshop to fit the kitchen's specific footprint. Built to the layout that came out of our CAD design, with positions optimised for the flow between cooking, prep and service.

Services and ceiling

Full gas, electrical and plumbing works to support the cooking, refrigeration and warewashing load. Suspended ceiling installed to complete the finish and integrate with the venue's wider interior specification. EPAS grease management on the extraction run.

Equipment supply and install

Rational SelfCookingCenter 10-grid combi oven for production cooking. Blue Seal gas cookline including fryers and chargrill. Foster Xtra counter refrigeration throughout. Maidaid pass-through dishwasher for warewashing at function pace. All equipment commissioned and signed off ready for the venue opening.

The outcome

Operational for the venue opening

The kitchen was handed over within the 5-week programme, commissioned and ready ahead of Avenue Tennis's opening. Delivered in coordination with WW Martin's wider construction programme, with our team sequencing works around the active site to keep the kitchen on track. The finished installation supports the venue's hospitality and function offering — a kitchen specified to match the quality of the facility around it.
