Consequently, main contractor WW Martin appointed Kent Commercial Kitchens for the catering package on a new build school in Deal. We took the kitchen from full design through to a working handover, ready for the first day of term.

Specifically, the scope covered the complete commercial kitchen and its extraction system. The challenge sat overhead: an island canopy positioned over the cooking suite, with no wall to fix back to and a roof structure that could not carry the load directly. The canopy needed bespoke steel trusses, designed and installed, to support it. Alongside the kitchen, the brief included a walk-in cold room and a separate freezer room, full stainless steel fabrication, and a programme tight enough to hit term start on a live construction site.

What we did

Designed, fabricated and installed in three weeks

Kitchen design and cooking line

To meet the brief, we designed the full kitchen layout around the school's service pattern and the building's fixed points. The cookline runs a Blue Seal cooking suite with Rational combi ovens for production, sized for volume catering and quick turnaround at service.

Island canopy on bespoke steel trusses

However, the island canopy was the defining engineering problem. With no wall behind it and a roof that could not take the load, we designed bespoke steel trusses to carry the canopy over the cooking suite. The extract was designed to DW172, with canopy, ductwork and fan sized for the cooking line beneath.

Cold storage, servery and fabrication

Additionally, a walk-in cold room and a separate freezer room were included for bulk storage. A Moffat heated servery and pass for service, True refrigeration through the kitchen, and bespoke stainless steel fabrication throughout, prep tables, benching and servery, built for hygiene and daily use.

As a result, everything was designed, fabricated and installed inside a three-week window on a live construction programme, sequenced around the other trades on site and handed over complete for the start of term.

The outcome

Complete and in service for term start

As a result, the kitchen was completed and handed over in time for the start of the new term. It now runs daily service for the school, with the island canopy and extraction, walk-in cold and freezer storage, and the full cooking line all in use from the first day. The catering package was delivered in three weeks on the construction programme, fabricated and installed by our in-house team.
