Brewery bar kitchen design: kitchen and a 15-metre bar in a residential setting
Kernel Brewery has been a fixture of the Bermondsey Beer Mile since 2009. For its taphouse, the brewery wanted a commercial kitchen and a long service bar that could handle a full craft range and busy sessions. Fleet Architects, who we work with regularly, brought us in to design and build both.
The site sits in a residential part of Bermondsey, so the systems had to be planning-compliant from the outset, with noise and odour control as a hard requirement rather than an afterthought. The brief covered a modern, energy-efficient kitchen and roughly 15 metres of bar to serve the full beer range, with the kitchen and bar designed to work together under pressure.

The kitchen
A brewery bar kitchen design for Bermondsey.
A modern commercial kitchen built around planning-compliant extraction designed to run quietly while controlling grease and odours. Fire-rated extract ductwork and a Ceasefire suppression system, new commercial gas pipework and gas safety, energy-efficient cooking including Rational combi ovens, and hygienic wall cladding with slip-resistant vinyl flooring throughout.
The bar
Around 15 metres of bespoke stainless steel bar, built to our design to take heavy daily use and stay easy to clean. Integrated beer drip trays, glass-refreshing sprays set into the bar top, under-counter glasswashers, and refrigerated storage with ice wells, all laid out for fast service across a busy taproom.
Air and climate
Samsung air conditioning and a central air handling unit to keep the taproom comfortable through the seasons and move air evenly across the seating without draughts.
Noise and odour control drove the design throughout, given the residential surroundings. Equipment was specified manufacturer by manufacturer for reliability under pressure, and the kitchen and bar were installed together so the venue opened as one working space.

The outcome
Open and in service on the Beer Mile
The finished kitchen and 15-metre bar are in daily service at the taphouse. The extraction and air handling keep the space compliant and workable in a residential setting, and the bar was built to hold up to intensive use while staying quick to run and easy to clean. Delivered in seven weeks.
