Fire Suppression Systems for Commercial Kitchens

Commercial kitchen fire suppression is a legal and practical necessity for any site running fryers, griddles, or solid-fuel cooking equipment. This guide explains how the systems work, what a compliant installation includes, and how to keep it certified year on year.


Why it matters

Why fryers and solid fuel need dedicated protection

Cooking oil fires burn hotter and spread faster than ordinary fires, and water makes them worse. A standard extinguisher or sprinkler is not designed for this risk, which is why commercial kitchen fire suppression relies on wet chemical systems built specifically for cooking appliances.

Fryer risk

Deep fat fryers hold oil that can reach auto-ignition temperature within seconds of a thermostat fault. A wet chemical agent cools the oil and forms a soapy film that stops re-ignition.

Solid fuel and charcoal

Grills, charcoal ovens, and wood-fired equipment produce grease-laden vapour that settles in ductwork. Suppression nozzles must cover the plenum, duct, and appliance surface, not just the cooking zone.

Legal duty

Under the Regulatory Reform (Fire Safety) Order 2005, the responsible person must carry out a fire risk assessment and put in place proportionate measures. For high-risk cooking, this normally means automatic suppression.

How it works

How a wet chemical suppression system operates

Every system links detection, agent release, and fuel isolation, so a fire is starved of both heat and gas or electricity the moment it is detected.

Detection

Fusible links or heat sensors mounted above each fryer, griddle, and grill trigger the system automatically when temperatures exceed a set threshold.

Agent discharge

A wet chemical agent floods each appliance and the duct plenum through fixed nozzles, cooling the surface and sealing it against oxygen to prevent flashback.

Fuel and power shut-off

A mechanical or electrical interlock cuts gas and electricity to the protected appliances the instant the system fires, stopping fuel reaching the fire.

Manual pull station

A manual release near the kitchen exit lets staff trigger the system by hand if they spot fire before the automatic detectors respond.

Because the extraction canopy, ductwork, and suppression nozzles all sit in the same space, the design has to be coordinated with your kitchen extraction system rather than fitted as an afterthought.

Maintenance, testing, and getting the design right first time

A suppression system that passed inspection five years ago is not automatically fit for the kitchen you run today.

Manufacturers and insurers typically require a six-monthly service by a competent engineer, covering the detection links, cylinder pressure, nozzle condition, and interlock function. Records of every service should be kept on site, as insurers will ask for them after any incident. If you change equipment, add a new fryer, or move a grill, the coverage design needs checking again: a nozzle positioned for the old layout may leave a new appliance unprotected. Is fire suppression a legal requirement for commercial kitchens?
There is no single law naming fire suppression as mandatory, but the Regulatory Reform (Fire Safety) Order 2005 requires you to assess fire risk and put in proportionate control measures. For any kitchen with fryers or solid fuel appliances, an automatic wet chemical system is the standard expected outcome of that assessment, and most insurers will not offer cover without one.

How often does a fire suppression system need servicing?
Most manufacturers specify a six-monthly service by a competent engineer, checking cylinder pressure, detection links, nozzle alignment, and the gas or electrical interlock. Keep the service certificate on site, as your insurer will ask for it if you ever need to claim after a fire.

Can I use a standard fire extinguisher instead?
