Restaurant kitchen installation Folkestone: rotisserie chicken restaurant inside shipping containers
Le Coq is a rotisserie chicken and chips restaurant on Folkestone Harbour Arm — a venue built inside conjoined shipping containers with views across the harbour. The concept is simple: slow-cooked rotisserie chicken, chips and sides, dine-in or takeaway. KCK were appointed to design and fit out the full commercial kitchen, prep room, dishwash room and wet bar, working with both the Le Coq team and the Folkestone Harbour Company. One of six major installations completed in summer 2023.
The shipping container structure created a specific technical challenge: the extraction canopy required specialist cutting and welding through the container roof to create a compliant ventilation solution. LPG rather than mains gas. The client was new to the food industry — we guided the build from initial design through to handover.

Full kitchen, bar and servery fit-out in 4 weeks
Extraction, plumbing and LPG gas
Wall-mounted extraction canopy with make-up air system installed — required specialist cutting and welding through the shipping container roof to achieve a compliant and practical ventilation solution. Complete LPG gas works package throughout the kitchen, all pipework and connections installed and tested to Gas Safe standards. Complete plumbing and hot water system. Bioclad UPVC hygienic wall cladding and slip-resistant vinyl flooring throughout the kitchen and prep areas.
Cooking suite
Rotisol gas spit rotisserie oven installed as the centrepiece of the kitchen — visible to customers and central to the Le Coq concept. Rational combi oven for batch cooking. Lincat cooking appliances across the cookline. Hoshizaki blast chiller for rapid cooling of cooked product. Sterling Pro refrigeration and freezers for cold storage. Bespoke stainless steel fabrication throughout the kitchen — benches, sinks and shelving.
Bar and hot food servery
Bespoke wet bar designed and built with timber frames, stainless steel finishes and Arctic White Corian worktops — durable, cleanable and in keeping with the venue's contemporary harbour aesthetic. Corian servery counter with integrated Ceran hotplates. Moffat hot servery equipment for holding and displaying hot food. Scotsman ice machine for bar service. Maidaid glasswasher and dishwashers for warewashing across the operation.

The outcome
A working rotisserie kitchen on Folkestone Harbour Arm
Le Coq opened on Folkestone Harbour Arm with a fully operational kitchen and bar — rotisserie, combi oven, blast chiller, hot servery and bar all in place inside a shipping container structure. A technically demanding install with LPG, bespoke extraction and a Corian bar and servery counter, delivered in 4 weeks entirely in-house. One of the more distinctive projects on the Harbour Arm — and one of six major installations completed that summer.
