Pub kitchen Whitstable: galley kitchen in a listed seafront pub
The Royal Naval Reserve sits in the heart of Whitstable, a seafront pub serving both locals and visitors. Shepherd Neame asked us to redesign a tight galley kitchen so it could carry a more varied menu while meeting current hygiene standards, all within a listed building.
The constraints were the space and the building. A galley layout leaves little room to move, and listed-building status meant the extraction had to be reworked carefully rather than simply replaced.

Extraction redesign
Because the pub is listed, the extraction system was redesigned to meet planning rules and modern standards while keeping its impact on the building and neighbours down. Noise and odour control were built into the design, then gas and plumbing works followed.
Layout and equipment
A CAD layout that made the galley work harder, with bespoke stainless steel benches and sinks, a Blue Seal cooking line and Gram refrigeration. The result is a kitchen that carries a wider menu and is easier to keep clean.
