The brief
A full kitchen redesign on Margate seafront
Waverley House is a restaurant on Margate's seafront — a busy, all-day operation drawing both local diners and visitors. Owner Tomas had a clear vision: a better layout, properly specified equipment at every station, and surfaces that would hold up under high-volume daily service.
The brief started with CAD design — multiple floor plan iterations until the layout was right, then full installation. New hygienic surfaces, suspended ceiling, Polyflor slip-resistant flooring, walk-in cold room, full cooking suite and warewashing, bar equipment and grease management. Delivered in 3 weeks, in-house.
What we did
CAD design through to handover in 3 weeks
CAD design and layout planning
Full CAD kitchen design produced and iterated with Tomas across multiple revisions — positioning the cooking suite, refrigeration, warewashing and bar station to optimise flow from prep through to service. Design signed off before installation began.
Surfaces, ceiling and flooring
UPVC hygienic wall cladding throughout the kitchen. Suspended ceiling system installed. Polyflor slip-resistant safety flooring laid across the full floor area — appropriate for a high-footfall seafront restaurant running continuous service.
Cooking suite and hot holding
Rational iCombi combi oven as the anchor of the cooking suite. Blue Seal fryers and griddles across the main cookline. Hatco drawer warmers at the pass for consistent service temperature. Equipment positioned for the chef's workflow from the design stage.
Refrigeration, warewashing and ancillaries
Walk-in cold room installed for bulk cold storage. Foster drawer refrigeration under-counter at prep positions. True cabinet refrigeration for working cold storage. Winterhalter glasswashers and Maidaid dishwashers for the warewash area. Ice-o-matic ice machine. Aqua Mundus grease management system. Bar equipment and beverage dispensers. Bespoke stainless steel fabrication — benches, sinks and shelving throughout.
