School Kitchen Air Conditioning and Ventilation
School kitchens are consistently the hottest working environment on any school site. Combi ovens, bratt pans and dishwashers run for hours next to catering staff who have no choice but to stand beside them. As summers get hotter, school kitchen air conditioning has moved from a nice-to-have to a serious operational and welfare question for business managers and facilities teams across Kent.

Why school kitchen air conditioning matters this summer
There is no legal maximum temperature for a workplace in the UK, and that includes school kitchens. But the absence of a fixed number does not remove the duty on schools to manage the risk.
The Health and Safety Executive expects employers to assess thermal risk and take reasonable steps to protect staff, particularly where people are working near ovens, steamers and extraction canopies for a full shift. In a kitchen where equipment adds heat all day, that duty is harder to meet without proper cooling.
Complaints tend to peak in June and July, when catering staff report headaches, dizziness and kitchens that become genuinely unsafe to work in for a full lunch service. Extraction first, cooling second
DW172 extraction and comfort cooling are two different jobs
One removes heat and grease from the cooking line. The other cools the room for the people working in it. Confusing the two leads to wasted budget.
Kitchen extraction (DW172)
Canopy extraction is sized against the BESA DW172 standard to remove grease-laden air and heat directly from the cooking equipment. It is the first line of defence against a hot kitchen and should always be checked and balanced before comfort cooling is even discussed.
Comfort cooling
Air conditioning cools the wider room for staff standing away from the cooking line. It does not replace extraction and should never be positioned so that cool air is drawn straight up into the canopy before it does any good.
Combined design
The two systems need to be designed together. Undersized extraction leaves heat and grease in the room regardless of how much cooling you add. Oversized extraction pulls conditioned air straight out again, wasting energy and budget.
Getting the install right
F-Gas certified installation and the summer holiday window
Refrigerant work is not a job for a general handyman or a maintenance contract that has never touched a split system. Anyone installing, servicing or decommissioning air conditioning equipment has to hold F-Gas certification, and a school that lets uncertified work happen carries the liability if refrigerant is handled incorrectly.

The six-week window

Coordinating with other works
If the extraction canopy needs upgrading too, it makes sense to do both while the kitchen is already out of service, rather than closing the room twice across two different holidays.
To secure a slot before the diary fills, book a site survey in the spring term so the design, quotation and equipment lead time can all be worked out before the holidays start.

Is there a legal maximum temperature for a school kitchen?
No. UK law does not set a maximum workplace temperature. The HSE instead requires employers to assess thermal risk and take reasonable steps to protect staff, which in a school kitchen usually means proper extraction and, where that is not enough on its own, comfort cooling.
What is the difference between kitchen extraction and air conditioning?

Can air conditioning replace kitchen extraction?
